Mrs. Brown's blender banana cake

Yield one 9"x12" cake or two 9"x9" cakes.


2½ cups flour
1¼ teaspoon baking powder
1¼ teaspoon baking soda
½ teaspoon salt

½ cup walnuts (optional)

3 ripe bananas
3 eggs
2/3 cup soft butter or margarine
1½ cup sugar
1 teaspoon vanilla


  • Turn oven on to 350°F.

  • Place first four dry ingredients into a mixing bowl and set aside.

  • (optional step) Place walnuts in blender, cover and blend a couple of seconds.
                          Add the blended walnuts to the bowl of dry ingredients.

  • Put remaining ingredients into the blender, cover and blend 20-30 seconds, or until smooth.

  • Pour blender contents over the dry ingredients and stir until well mixed.

  • Pour batter into lightly greased pan(s).

  • Bake in 350°F oven for 30-35 minutes, or until a test pick comes out cleanly.

  • Unmold onto cake rack to cool.

  • One may choose to top the cake with icing after it has cooled completely.
